This may be a dumb question, but in relation to the enshrined optimistic roll ups on Tezos, they don't use multi-sigs do they? Like how Matic does, or Arbitrum?

I'm not a fan of Matic; I think their marketing is disingenuous and intellectually dishonest. I'm moreso looking to differentiate between enshrined rollups on Tezos versus other rollups and scaling solutions.

Enshrined roll ups are built into the L 1, other L2 like ethereum are build using a smart contract
